Classic Collection The blade is constructed of a single piece of steel, with a unique convex edge for unsurpassed performance. Made of hollow handles which are then filled with sand to achieve the desired weight and deliver the perfect balance. Perfectly balanced knives provide optimal control. The blade is made of the finest stainless steel called CROMOVA18 (Chromium, Molybdenum and Vanadium), designed exclusively forGLOBAL. Ice tempered and hardened to Rockwell C56 – C58 degrees whichholds the razor-sharp edge of the blade longer than any other steel. Ergonomic, stainless steel hygienic handles with signature dimple pattern offer a comfortable, slip-resistant grip.	Ni Collection Incredibly strong knife tips and Asian design enable highest standard of accuracy. Unique convex edge of the GLOBAL blade makes cuts smoother, requiring less energy. Lightweight CROMOVA 18 steel blade retains its edge longer than any major knife brand. Thicker blade with increased weight and a longer handle to perfectly balance the increased weight. Rounded spine ensures comfort while using a professional pinch grip. Sleek, ergonomic handles are perfectly balanced and designed for maximum comfort and control.	Sai Collection Special three-ply blade construction made from corrosion-resistant 18/8 and CROMOVA 18 stainless steel Unique convex edge of the blade makes cuts smoother, requiring less energy. Perfectly balanced and ergonomic handles designed in the traditional Japanese bushido way of the Samurai. 12.5-degree blade edge is mirror-polished by hand for exceptional long-lasting endurance. Unique thumb rest gives added comfort and control. Each blade is individually hammered by hand and designed sothat small hollows create air pockets between the blade so foodelegantly falls away from the surface.
